Quinoa Patties

Easy Green Smoothie

2½ cups cooked quinoa, at room temperature
4 large eggs, beaten
½ tsp fine grain sea salt
1/3 cup finely chopped fresh chives
1 yellow onion finely chopped
1/3 cup freshly grated parmesan or Gruyere cheese
3 cloves garlic finely chopped
1 cup whole grain bread crumbs
Water, if needed
1 TSP olive oil



  1. Combine the quinoa, eggs and salt in a large bowl
  2. Mix in chives, onion, cheese and garlic
  3. Add breadcrumbs and stir, let sit a few minutes to absorb moisture
  4. You should be able to form the mixture into 12 patties
  5. You can add water if they are crumbly or more breadcrumbs if they are too wet
  6. Heat the oil in a large frying pan or on a griddle on med-low heat
  7. Add as many patties fit on the pan comfortably and cover, cook until golden brown, about 7-10 minutes
  8. Flip the patties and cook for an additional 7 minutes
  9. Cool and enjoy as a main course or a side dish. I serve with spicy mayo or Dijon mustard.

I usually make a double batch and use them for lunches or grab and go snacks.
